BROWNIE ICE CREAM SANDWICHES
Ingredients
  • 1 c. flour
  • ¼ t. baking soda
  • ¼ t. salt
  • ¼ c. butter
  • 1 ½ c. semi-sweet chocolate chips
  • ⅔ sugar
  • 2 eggs
  • 1 t. vanilla
  • 1 qt. your favorite ice cream flavor
  • Assorted toppings: chopped nuts, sprinkles, chocolate morsels, chopped candies, etc.
Instructions
  1. Preheat oven 325. Spray ice cream sandwich pan with PAM.
  2. In bowl, combine flour, baking soda and salt.
  3. In large microwavable safe bowl, melt butter and chocolate chips.
  4. Whisk in sugar, eggs and vanilla. Beat well.
  5. Add flour mixtures, stir until just combined.
  6. Spoon 2 T. of batter into each pan cavity, spreading evenly.
  7. Bake 8-10 minutes or until inserted toothpick angled to center comes out clean.
  8. Immediately unmold brownies onto cooling rack, cool completely.
  9. Scoop about ¼ c. ice cream onto smooth side of half of brownies.
  10. Top with remaining brownie, pressing gently.
  11. Roll edge of sandwiches in assorted toppings.
  12. Wrap in saran wrap and freeze immediately.
Notes
*****This does require an actual Ice Cream Sandwich Pan. I have also used boxed brownie mix when in a hurry and after baking and letting it cool, I use a circular cutter like a biscuit cutter or cookie cutter to make my rounds. You have to do about 3-4 boxes of bought brownie mix to get large enough flat brownies to cut.
