Homemade Sweet and Spicy Cucumbers
Ingredients
- 6 cups unpeeled pickling cucumbers, sliced thin
- 1 large Vidalia onion, sliced thin
- 1 large green bell pepper, sliced
- 4-6 red/green chili peppers, optional
- 1 T. kosher salt
- 1 c. apple cider vinegar
- 1 ½ c. sugar
- 1 t. celery seed
- 1 t. mustard seed
- 1 t. red pepper
- 1 t. Chef Paul Prudhomme’s Magic Seasoning Blend-“Sweet and Spicy”
Instructions
- Place the sliced cucumbers, onions and bell peppers in a bowl with the salt. Set aside and stir once in a while.
- In a saucepan, mix the vinegar, sugar, celery seed, mustard seed, red pepper and magic seasoning blend.
- Bring to a boil. Remove from heat and let cool for at least 1 hour.
- Pour the cooled mixture over the cucumber mixture. Mix well.
- Place the mixture in the size jars you would like and store in refrigerator for at least 24 hours before eating.
- Keep in refrigerator. Will keep for 2 months
