Satisfying Mediterranean Greek Wraps
Ingredients
- 1 c. plain Greek yogurt
- 1 T. chopped fresh mint
- 1 T. chopped fresh chives
- 1 T. chopped fresh parsley or cilantro
- Kosher salt, black pepper
- 2 c. shredded fresh carrots
- 2 c. thinly sliced cucumbers
- 1 medium red onion, thinly sliced
- ½ c. cooked edamame beans or your favorite peas or beans
- 4 sheets of soft flatbread, like lavash
- 2 tomatoes, halved and thinly sliced
Instructions
- In bowl, combine yogurt, herbs and season with salt and pepper to taste. Set aside.
- In another bowl, combine carrots, cucumber, red onion and beans/peas.
- Lay 1 sheet of flatbread on work surface, with long edge parallel to the table.
- Spoon about ¼ of yogurt mixture lengthwise down the center of flatbread.
- Lay ¼ of tomatoes over the yogurt mixture, then arrange about ¼ c. of carrot mixture over the tomatoes.
- Fold 1 side of flatbread over the veggies and roll up to meet the other side.
- Secure with a few toothpicks, then cut in half.
- Repeat with remaining fillings and flatbread.
- Refrigerate until ready to serve.
Notes
*****You can change up veggies, as well as bread (you can even use tortillas or pita breads.
