Lemony Shrimp Scampi with Whole Wheat Pasta
Ingredients
- 2 c. whole wheat elbow pasta (or your favorite shaped-pasta)
- Olive oil
- Salt
- 1 lb. medium shrimp (either already cooked or raw)
- 2-3 c. corn saute (see additional recipe)
- Juice of 2 lemons
- ¼ c. Worcestershire sauce
- Fresh chopped parsley
- Salt, red/black pepper
- Freshly grated Parmesan cheese, optional
Instructions
- In large pot, add pasta to salted boiling water. Follow directions on package to cook. In the last 2-3 minutes of boiling, drizzle some olive oil.
- Drain and set aside.
- In same pot, drizzle some olive oil in bottom of pot.
- If shrimp are raw, season them and saute in the olive oil until pink. If they are already cooked (like boiled shrimp), just add to the heated olive oil with the corn saute.
- Heat through.
- Add the pasta, a little at a time. If you don’t want too much pasta, you can stop and not use all of it. Use leftover pasta for another dish.
- Add the lemon juice and Worcestershire and drizzle more olive oil. Mix well.
- Taste for seasoning. Garnish with fresh chopped parsley.
- You can eat at this point or place in 325 warm oven, covered and heat until hot.
- You can sprinkle with parmesan cheese if desired.
