Frozen Peanut Butter Balls
Ingredients
- 1 (18-oz.) jar creamy or crunchy peanut butter (I like to make both.)
- 2 ½ c. powdered sugar
- 1 t. vanilla extract or almond extract
- 8 oz. of semi-sweet chocolate, chopped
Instructions
- In a bowl, combine the peanut butter with sugar. With an electric mixer, beat until smooth and stiff.
- Beat in the vanilla or almond extract.
- Shape the mixture into 1” balls. This should make about 2 dozen balls.
- Place on wax paper and place in the freezer for at least 1 hour.
- Place the chocolate in a double boiler or a small bowl over simmering hot water. Stir to melt it. Remove chocolate from heat.
- I use fondue forks (2) and gently set the ball into the chocolate only half way. Let excess chocolate drip off. Lay on waxed lined sheet tray.
- You can take the forks and make drizzle marks on the side that is not done in chocolate.
- Place in refrigerator until chocolate is set.
- Once set, you can place in Ziploc bags and freeze.
