Alice's Chicken-Broccoli Orzo Supreme Casserole
Ingredients
- 6-8 skinless, boneless chicken breast, season
- 4 chicken bouillion cubes
- 1 small onion
- 2(12-oz.) packages of fresh broccoli florets (steamer bag type)
- 4 T. olive oil
- 1 (8-oz.) carton sliced mushrooms
- 1 bunch chopped green onions
- ½ t. curry powder
- 3 T. lemon juice
- 2 cans cream of chicken soup
- 1 c. Miracle Whip or mayo
- Grated sharp cheddar cheese
- Italian bread crumbs
- 2 (8-oz.) boxes Archer Farms Southwest-Style Orzo or your favorite Mexican/Spanish Style Rice
Instructions
- Bring a large pot of salted water to boil with added bouillion cubes, red/black pepper, garlic powder, 1 small chopped onion. Place the seasoned chicken in the pot of boiling water.
- Cook until tender, drain and cut into bite-size pieces and set aside.
- Steam broccoli in microwave following directions on bag.
- Also cook the orzo by following the directions on the box.
- Mix the broccoli and orzo and season.
- In 13x9” baking dish, place a layer of the broccoli/orzo and the chicken on top. Set aside.
- In skillet, drizzle olive oil and saute green onion and mushrooms until tender.
- Add the curry, lemon juice, soup and mayo. Simmer until heated through.
- Spread this mixture over the chicken.
- Sprinkle with cheese and bread crumbs.
- Bake at 350 until hot and bubbly.
Notes
*****You can make smaller pans of this and freeze after cooking. To reheat, thaw in refrigerator, heat in oven until hot and toward the end add more grated cheese and let melt. This freshens up the dish.
