Quick and Easy Seafood Pasta in a Skillet
Ingredients
- 1 lb. Campari or Roma Tomatoes (halved)
- 1 (8-oz.) carton sliced baby mushrooms
- 1 bell pepper of each color (red, orange, yellow) cut into strips
- 3 ears of fresh corn, cut kernels off cob
- 1 red onion, thinly sliced
- 3 T. butter
- Extra virgin olive oil
- 2 T. minced garlic
- 1 lb. medium shrimp, seasoned
- 1 lb. crawfish tails, seasoned
- 1 lb. lump crabmeat
- 1 (12-oz.) package of medium egg noodles or your favorite pasta
- Salt, red/black pepper, garlic powder
- Juice of 2 lemons
- Chopped fresh parsley or green onions, garnish
- Freshly grated parmesan cheese, optional
Instructions
- Boil pasta in salted water with some drizzle of olive oil.
- Drain and set aside. Drizzle with more olive oil and mix. This keeps the pasta from sticking. Keep warm.
- In large skillet, drizzle with olive oil and heat over medium flame.
- Add red onion and bell pepper and saute for 1-2 minutes.
- Add the shrimp and crawfish and cook another 4-5 minutes.
- Add the corn, garlic, mushrooms and tomatoes. Stir gently and cook another 3-4 minutes.
- Add the hot pasta to the dish. Mix well and taste for seasoning.
- Add the butter, lemon juice and crabmeat and fold in gently. Taste again for seasoning.
- Garnish with chopped parsley or green onions.
- Sprinkle with freshly grated parmesan cheese. Enjoy!
Notes
*****You can just do one type of seafood instead of all three. Serve with nice salad and hot bread. Easy, easy, easy!
