Marinated Red Onion, Tomato, Baby Cucumber Salad
Ingredients
- 1 large red onion, thinly sliced
- ½ pt. red grape tomatoes
- ½ pt. yellow grape tomatoes
- 6 baby or pickling cucumbers
- Kosher salt, fresh black pepper
- Juice of 3 fresh lemons
- ¼ c. balsamic vinegar
- Drizzle of virgin olive oil
Instructions
- In a serving bowl, place the thinly sliced onions in the bottom. Season with salt and pepper.
- Squeeze juice o f 1 lemon over the onions.
- Place the halved tomatoes and sliced cucumbers on top of onions.
- Season the top with salt and pepper. Cover and refrigerate for at least 1 hour.
- When ready to serve, squeeze the 2 lemons and mix with the vinegar.
- Drizzle olive oil over the salad. Pour the lemon/vinegar dressing on top. Toss, taste for seasoning. Serve.
Notes
*****If you have leftovers of this, it actually becomes like a marinated salad. Just as delicious.
