Before beginning the blog post, HUBBY wanted me to express his deepest thanks for all the wonderful and kind words you all conveyed about his experience attending the services for the late JUSTICE SCALIA. He said it was a once in a life time memory he will always cherish!

The month of February is quickly coming to an end. I knew it would be like this. The whirlwind is just beginning. As I wonder about Garden Centers, I see they have starting to put out those wonderful veggie and fruit plants for your spring and summer gardens. I really look forward to planting a garden. It makes me feel so “FARMER BROWN”! I am a bit screamish when I see worms or ugly little insects crawling and eating my produce. Today’s eggplant recipe made me think of this upcoming season. This recipe is really good and helps use up those eggplant that start coming in by the bushel!

If you have never done a garden, try it. You can start simple and just put the plants in large pots with some type of trellis to hold the plants up. I put a great deal of my plants in pots that way I can move them around especially if we have a freaky cool snap and you need to protect the plants.
