Good Morning Foodies! Looks like we survived another CRAZY MARDI GRAS SEASON! Sometimes during the WILD CELEBRATIONS OF THE CARNIVAL, I sit quietly and wonder why I am not in a MENTAL ASYLUM! Then I take a good look around at everyone and realize. . . . MAYBE I AM ALREADY THERE! I also realize that sometimes I could be just ONE TENT AWAY FROM A FULL-BLOWN CIRCUS!   I must say I enjoy the calming down which begins with ASH WEDNESDAY AND THE “40” DAYS OF LENT!  I think we can all use a little cleansing.

You will see that with the upcoming weeks I will gear the menus toward LENT! For those of you who are not CATHOLIC, during LENT we cannot eat MEAT on ASH WEDNESDAY, ALL THE FRIDAYS DURING LENT AND GOOD FRIDAY! I hope you can enjoy some of the menus even though they are heavy on the SEAFOOD SIDE! I think you will like the TANGY TUNA BURGERS—a nice change up! So hang in there—at some point will get back to BEEF, CHICKEN, ETC.
