Crostini with Sweet Cherry Tomatoes and Stilton
Ingredients
- 2 (10-oz.) containers of cherry tomatoes (try to get mixed colors)
- 2 T. extra-virgin olive oil, more for brushing
- 2 t. sugar
- Kosher salt/fresh black pepper
- 1 t. butter
- 4 shallots, peeled and sliced thinly
- 24 (1/3”) thick slices of baguette
- 6-8 oz. good quality Stilton cheese, crumbled
Instructions
- Preheat oven 400. In 13x9” baking dish, spray with PAM.
- Toss the tomatoes with 2 T. olive oil, 1 t. sugar and season with salt and pepper.
- Roast in oven 35-40 minutes, shaking dish occasionally, until tomatoes start to burst and are lightly browned. Remove from oven but keep oven on.
- In large skillet, melt butter, 1 T. olive oil.
- Add shallots, 1 t. sugar, and salt and pepper. Cook, stirring occasionally, until they start to brown.
- Reduce heat and cook until tender.
- Brush the baguette with olive oil and arrange on large baking sheet.
- Bake 12 minutes or until golden and chewy. Let cool slightly.
- Top with cheese, shallots, tomatoes and any of the tomato juices.
- Serve with additional cheese on side.
