Crispy Green Bean Slaw
Ingredients
- 3 T. olive oil
- 3 T. white wine vinegar
- 2 T. honey
- 1 T. kosher salt
- 1 T. black pepper
- 4 c. green beans or haricots verts
- 2 c. thinly sliced red cabbage
- 1 c. shredded carrots
- 1 c. thinly sliced red bell peppers
Instructions
- Whisk together oil, vinegar, honey, salt and pepper for the vinaigrette.
- Blanch beans in boiling salted water, 2 minutes.
- Transfer beans to ice water to stop cooking. Drain.
- Slice green beans, lengthwise.
- Toss beans, cabbage, carrots and bell peppers with the vinaigrette.
