If you are looking for a reason to have a celebration of some sort-look no further than today! COLUMBUS DAY is here! I am wondering if kids today even know who that is! I did not realize that they had done away with CURSIVE WRITING! Glad to hear they are bringing that back! How do you have a signature if you have not CURSIVE WRITING! SO CONFUSED!

As you can see from today’s menu, there are two items that are just not always there but when they pop up, get them! I don’t know about you but one thing I do not make is home-made pasta, especially GNOCCHI! I think the store-bought types are just fine. I saw this at Rouse’s in Lafayette. I hope they bring it back. It was really good. Anything with YAMS is good for me!

The other item is the MANGROVE SNAPPER! Someone gave this to HUBBY! It is a beautiful, very firm white fish. I loved preparing this dish! If you ever run across this fish, give it a try. Real similar to our RED SNAPPER! Last but not least, remember back in the day when those DESSERTS IN A COFFEE MUG were the hottest thing. Looks like they are making a comeback. I must say this is the quickest and easiest way to create a dessert when you need one “PRONTO”!
