BUSY SHORT WEEK!
Today’s Menu:
Green Bean and Cannellini Salad
Good Morning Foodies! Hubby and I had a fantastic few days with new GRAND PEEP and her BIG SISTER. It is so hard to get enough of seeing those babies when they don’t live right next door. Miss them already. All in all, was a nice weekend to celebrate HUBBY’S BIRTHDAY and get those extra hugs and kisses from the GRAND PEEPS. THE BIG EASY WAS ROCKING THIS PAST WEEKEND!
Today’s menu will feature the world famous “CANELLINI BEAN”! It is probably the least used bean unless you are Italian. I can remember my grandmother putting this bean and fava beans in almost everything she cooked from breakfast, lunch to dinner. I guess that is why I love those beans so much. I can see her shelling the beans, cooking and talking while standing over her stove. Can feel the love!
The soup you see today is one I just played with. You can sub any ingredient you like. It just so happen I had THREE “C” ingredients that day—CRAWFISH, CARROTS AND CANELLINI BEANS! Then I had some leftover beans and mixed with some fresh green beans to make the nice salad. Hope you like it as much as I do!
