BLT, Fried Egg and Cheese Sandwich
Ingredients
- 4 thick slices bacon
- 2 slices Monterey Jack Cheese
- 2 thick slices of whole wheat bread (or favorite bread—nice thick one)
- 1 T. spicy mayo
- 4 tomato slices
- Butter lettuce or spinach leaves
- 1 t. unsalted butter
- 1 large egg
Instructions
- In small skillet, cook bacon, turning them halfway through, until they are crisp. Transfer to paper towels and drain.
- Toast the bread and while hot, set the cheese slices on 1 piece of hot bread. Spread the mayo on the other slice of toast.
- Top with bacon, tomato, lettuce.
- In small nonstick skillet, melt butter. Add egg and fry over medium heat, gently flipping egg after 2 minutes, until crisp around the edges. You want yolk to be a little runny.
- Slide egg onto the lettuce. Close sandwich and serve immediately.
