Ingredients
  • 2 (10-oz.) containers of cherry tomatoes (try to get mixed colors)
  • 2 T. extra-virgin olive oil, more for brushing
  • 2 t. sugar
  • Kosher salt/fresh black pepper
  • 1 t. butter
  • 4 shallots, peeled and sliced thinly
  • 24 (1/3”) thick slices of baguette
  • 6-8 oz. good quality Stilton cheese, crumbled
Instructions
  1. Preheat oven 400. In 13x9” baking dish, spray with PAM.
  2. Toss the tomatoes with 2 T. olive oil, 1 t. sugar and season with salt and pepper.
  3. Roast in oven 35-40 minutes, shaking dish occasionally, until tomatoes start to burst and are lightly browned. Remove from oven but keep oven on.
  4. In large skillet, melt butter, 1 T. olive oil.
  5. Add shallots, 1 t. sugar, and salt and pepper. Cook, stirring occasionally, until they start to brown.
  6. Reduce heat and cook until tender.
  7. Brush the baguette with olive oil and arrange on large baking sheet.
  8. Bake 12 minutes or until golden and chewy. Let cool slightly.
  9. Top with cheese, shallots, tomatoes and any of the tomato juices.
  10. Serve with additional cheese on side.
