MAKING LENT EASIER!

Good Morning Foodies!

Today’s Menu:

Breakfast/Brunch Casserole
Veggie, Edamame & Chickpea Medley Salad
Delicate Mini Berry Cheesecake

This past weekend HUBBY and I were invited as they say, “UP NORTH”! You know that just means you are going past “1-10” and ALEXANDRIA, LA. I just love going to the woods and just relaxing. Nice to catch up with friends, share some memories and indulge in fabulous food and drinks! NOTHING BEATS OLD FRIENDS!

I know not all of you followers out there are CATHOLIC and don’t have to worry about not eating meat on FRIDAYS during LENT! Trust me, if you are a SEAFOOD LOVER, like me, that is NOT A PENANCE for me. I could eat SEAFOOD every day! I treat LENT like I do NEW YEAR’S RESOLUTIONS—I don’t make it hard. I try to do things that make me feel happy or good, like helping someone, doing something for the community. Yes, it is probably harder not to drink wine, or eat chocolate candy for 6 weeks but in the long run who does that help. NO ONE! Therefore, try a different approach and do something that is rewarding and fulfilling not only for you but for someone you may not even be aware that you helped.
When you look at today’s menu, pay special attention to the salad. I came up with this “WINNER” this past fall. It not only looks good but is delicious. If there are any VEGANS in your family they will love this dish. It is very filling and has the protein, veggies, etc. Give it a try. You can swap out or add other things that you might like better. It works well on so many levels.
