VETERAN’S DAY!

Today’s Menu:

Roasted Rack of Veal with Root Veggies
Wild Mushroom and Broccoli Casserole
Creamy Coconut Custard Pie

I know today is typically “REPEAT WEDNESDAY AND GADGET DAY”, but will do that tomorrow. Today we need to take pause and pay respect to all the VETERANS out there. I must say I am very proud of my SON (PEEP) CRAIG! He has invested his energy into the “WOUNDED WARRIOR” project. He has invited many of these fine people to come hunting in our LOUISIANA PARADISE! The people involved in this project are so appreciative. JOB WELL DONE, MY SON—very proud of your time and effort that you have dedicated to this most worthy cause.
When I think of the way we live our lives today, the idea of “VETERANS” comes to mind! I saw a writing done by MOTHER TERESA that I thought put all this in perspective. It goes like this!

LIFE…It is an OPPORTUNITY…BENEFIT from it. BEAUTY…ADMIRE it. A DREAM…REALIZE it. A CHALLENGE…MEET it. A DUTY…COMPLETE it. A GAME…PLAY it. A PROMISE…FULFILL it. SORROW…OVERCOME it. A SONG…SING it. A STRUGGLE…ACCEPT it. A TRAGEDY…CONFRONT it. AN ADVENTURE…DARE it. LUCK…MAKE it. TOO PRECIOUS…do not DESTROY it. LIFE is LIFE…FIGHT for it.
Stop and think about all those bold statements, and then thank GOD and a VET that you can fulfill those adventures!
