Mighty Irish Potato Cakes

Ingredients
  • 2 c. leftover mashed potatoes
  • ⅓ c. flour, plus extra for rolling surface
  • 2 T. milk
  • 1 T. chopped mixed herbs (or your favorites)
  • Salt, black pepper
  • 2 T. butter or olive oil
Instructions
  1. Combine the potatoes, flour, milk and herbs, in a bowl until smooth. Taste for seasoning.
  2. Divide into 4 balls on a floured surface and flatten into 3” patty.
  3. Heat the butter or olive oil in a large skillet over medium heat.
  4. Add patties and cook until golden brown on each side. Add more butter or olive oil as needed.
  5. Remove from pan and drain on paper towel.
  6. Sprinkle with extra salt.
