Garbanzo Bean Relish
- ⅓ c. red wine vinegar
- 4 T. balsamic vinegar
- ¼ c. extra-virgin olive oil
- Salt, black pepper, garlic powder
- 2 bunches, chopped green onions
- 1 medium red onion, chopped
- 1 red bell pepper, chopped or ¼ c. roasted red peppers, drained
- 3 T. honey
- 2-3 (12-oz.) cans garbanzo beans, drained (chick peas)
- Mix all the ingredients except beans in a bowl or jar.
- Pour over the beans and marinade for at least 4 hours or overnite. Will keep for 1 week.
- Season to taste if needed.
- Serve cold or room temperature.
*****You can add a variety of beans or do one selection of another bean such as white beans, pinto beans or black beans.
