Spicy Oven-Fried Green Beans
- 1 lb. fresh green beans, cleaned, trimmed and completely dry
- 2 eggs, beaten
- 1 c. Italian breadcrumbs
- Salt, red/black pepper, lemon-pepper and garlic powder to taste
- Juice and zest of 1-2 lemons
- Ranch dressing or flavored Greek yogurt, or favorite dipping sauce
- Preheat oven 425. Line a baking sheet with foil and spray with PAM.
- In bowl combine the breadcrumbs, all seasonings, lemon zest and juice. Mix well. Taste to see if it has enough flavor for you.
- Whisk eggs in separate bowl.
- Take each green bean and dip into beaten egg, shake off excess and then coat with breadcrumb mixture. Make sure the whole bean is covered.
- Lay on prepared baking sheet.
- Bake for 25-30 minutes, turning gently once, until brown and crispy.
- Place on serving platter with your favorite dipping sauce.
*****You can do this with most any veggie like asparagus, sliced zucchini, yellow squash, etc.
