Broiled Pesto Tomatoes over Shrimp-Corn Saute

Ingredients
  • 4-6 large and firm red tomatoes
  • 1 jar prepared pesto sauce
  • Fresh parmesan cheese
  • Green onions
  • Corn Saute recipe with Shri
Instructions
  1. Prepare the Corn Saute recipe with the shrimp. Set aside.
  2. Clean tomatoes and slice into thick slices. You should be able to get 3-4 slices per tomato.
  3. Season tomatoes with salt and black pepper.
  4. Layer the corn/shrimp sauté in bottom of baking dish.
  5. Top with sliced tomatoes.
  6. Place about 1 tsp. of pesto sauce over each tomato.
  7. You can also place one shrimp on top of pesto sauce.
  8. Bake in 350 oven until bubbly.
  9. Sprinkle with fresh parmesan cheese and serve.
Notes
*****When I have leftovers of this, I boil some bow tie pasta and cut up tomatoes and add the whole mixture to the pasta. Corn Saute
