Broiled Pesto Tomatoes over Shrimp-Corn Saute
- 4-6 large and firm red tomatoes
- 1 jar prepared pesto sauce
- Fresh parmesan cheese
- Green onions
- Corn Saute recipe with Shri
- Prepare the Corn Saute recipe with the shrimp. Set aside.
- Clean tomatoes and slice into thick slices. You should be able to get 3-4 slices per tomato.
- Season tomatoes with salt and black pepper.
- Layer the corn/shrimp sauté in bottom of baking dish.
- Top with sliced tomatoes.
- Place about 1 tsp. of pesto sauce over each tomato.
- You can also place one shrimp on top of pesto sauce.
- Bake in 350 oven until bubbly.
- Sprinkle with fresh parmesan cheese and serve.
*****When I have leftovers of this, I boil some bow tie pasta and cut up tomatoes and add the whole mixture to the pasta. Corn Saute
