Turkey Fajita Wraps (Crock Pot)

Ingredients
  • 2 c. picante sauce
  • 1 large green bell pepper, cut into strips
  • 1 large red bell pepper, cut into strips
  • 2 c. fresh shucked corn or frozen corn, thawed
  • 1 can black beans, rinsed and drained
  • 1 T. chili powder
  • 1 T. cumin
  • 3 T. lime juice
  • 3 T. minced garlic
  • 2 lbs. turkey breast cutlets, cut into 4” long strips
  • 16 whole wheat flour tortillas (8”), warmed
  • Shredded Mexican blend cheese
  • Sliced avocado, salsa, sour cream, optional
Instructions
  1. Mix the picante sauce, bell pepper, corn, beans, chili powder, cumin, lime juice, garlic and turkey into a 4 quart crock pot/slow cooker.
  2. Cover and cook on LOW for 6-7 hours or 3 to 4 hours on HIGH or until turkey is cooked through.
  3. Spoon about ½ c. of filling down center of each tortilla. Top with cheese and other desired toppings. Fold tortillas around filling.
