Fresh Green Beans with Bacon and Mushrooms

Ingredients
  • 6 slices of bacon
  • 1 (8-oz.) carton of sliced baby portabella mushrooms
  • 3 shallots, mined
  • 4 garlic cloves, minced
  • Kosher salt and black pepper to taste
  • 1 (8-oz.) pico de gallo
  • 1 (12-16 oz.) pkg. cleaned fresh green beans
  • ⅓ c. fresh lemon juice
  • Olive oil
Instructions
  1. In microwave, cook bacon, drain and chopped and set aside.
  2. In medium pot, heat about 2-3 T. olive oil.
  3. Saute the mushrooms, shallots, garlic and pico de gallo until the mushrooms release their moisture.
  4. Add green beans. Cover and cook 5-8 minutes or until crispy but tender.
  5. Add bacon and lemon juice and taste for seasoning.
