Fresh Green Beans with Bacon and Mushrooms
- 6 slices of bacon
- 1 (8-oz.) carton of sliced baby portabella mushrooms
- 3 shallots, mined
- 4 garlic cloves, minced
- Kosher salt and black pepper to taste
- 1 (8-oz.) pico de gallo
- 1 (12-16 oz.) pkg. cleaned fresh green beans
- ⅓ c. fresh lemon juice
- Olive oil
- In microwave, cook bacon, drain and chopped and set aside.
- In medium pot, heat about 2-3 T. olive oil.
- Saute the mushrooms, shallots, garlic and pico de gallo until the mushrooms release their moisture.
- Add green beans. Cover and cook 5-8 minutes or until crispy but tender.
- Add bacon and lemon juice and taste for seasoning.
