Sizzling Shrimp Scampi
- 2-3 sticks butter, softened
- ⅓ c. minced garlic
- ΒΌ c. chopped parsley
- Zest of 1 lemon
- 3 T. fresh lemon juice
- Kosher salt and fresh black pepper, garlic powder
- 3-4 lbs. large shrimp, shelled, deveined but tails left on
- Preheat oven 450. In medium bowl, mix the butter and garlic, 2 t. parsley, lemon zest, juice and seasonings.
- In a large baking dish, arrange shrimp in dish, with tails facing up.
- Dot the shrimp with the butter mixture and roast for 10 minutes, until shrimp are pink and butter is bubbling.
- Sprinkle the remaining parsley. Serve with hot crusty bread.
*****The amount of butter is determined by the size of the shrimp. It may take less or more.
