Creamy Feta Vinaigrette
- 3 oz. feta cheese, crumbled (French is the best for this)
- 2 ½ t. red wine vinegar
- 1 T. water
- ½ t. dried oregano
- ¼ c. plus 1 T. extra virgin olive oil
- Kosher salt and black pepper
- In food processor, pulse the feta with all ingredients except salt and pepper. Process until smooth.
- Season with salt and pepper.
