Creamy Feta Vinaigrette

Ingredients
  • 3 oz. feta cheese, crumbled (French is the best for this)
  • 2 ½ t. red wine vinegar
  • 1 T. water
  • ½ t. dried oregano
  • ¼ c. plus 1 T. extra virgin olive oil
  • Kosher salt and black pepper
Instructions
  1. In food processor, pulse the feta with all ingredients except salt and pepper. Process until smooth.
  2. Season with salt and pepper.
