In a bowl, combine the 1 c. sugar, ⅓ c. flour and salt. Mix well.
Add eggs and sour cream and blend.
Spoon mixture over peaches.
In another bowl, combine ½ c. sugar, ½ c. flour and ¼ c. butter until mixture resembles coarse meal. You can use a pastry blender, or two forks or knives to cut it up.
Sprinkle the coarse meal over the pie.
Bake 1 hour or until golden.
Garnish with fresh sliced peaches and serve with vanilla ice cream and garnish with a fresh mint sprig.
Refrigerate leftovers.
