Cook 1-2 c. of the rice medley. Follow directions on container. If you can’t find this brand, just use the brand you can find and looks for one that has a medley of flavors mixed into the rice.
Place rice on side until later.
In large skillet, heat a little olive oil that covers bottom of skillet.
Saute the peppers for about 1-2 minutes.
Season crawfish and add to peppers. Cook another 3-4 minutes.
Add the cherry tomatoes and corn and cook for about another 5 minutes until crawfish are done.
Gradually add amount of rice that you like. Season to taste.
Add green onions, for garnish.
