Coconut Cream Cheese Pound Cake

Ingredients
  • ½ c. butter, softened
  • ½ c. shortening
  • 1 (8-oz.) pkg. cream cheese, softened
  • 3 c. sugar
  • 6 large eggs
  • 3 c. flour
  • ¼ t. baking soda
  • ¼ t. salt
  • 1 (6-oz.) pkg. frozen flaked grated coconut, thawed
  • 1 t. vanilla extract
  • 1 t. coconut flavoring
Instructions
  1. Beat butter, shortening and cream cheese with mixer for 2 minutes or until creamy.
  2. Gradually add sugar, beating 5-7 minutes.
  3. Add eggs, one at a time, beating after each addition just until yellow disappears.
  4. Combine flour, baking soda and salt. Add to butter mixture, beating at low speed just until blended.
  5. Stir in coconut, vanilla and coconut flavoring.
  6. Pour batter into greased and floured 10” tube pan.
  7. Bake 325 for 1 ½ hours or until wooden toothpick inserted in center comes out clean.
  8. Cool pan on wire rack 10-15 minutes. Remove from pan and cool completely on wire rack.
