1 lb. potatoes or 2 c. potatoes that have been boiled and mashed
2 green chilis, or any mild type pepper that you can get, seeded and chopped
1 t. sea salt
1 t. red pepper
1 T. coriander leaves, chopped
3 T. finely chopped onion
Canola oil for frying

Instructions
Boil potatoes in salted water (peeled or unpeeled). Drain and mash.
Mix with chili pepper, salt, red pepper, coriander and onion. Taste for seasoning.
Form into small balls and flatten with the palm of your hand.
Heat oil for shallow frying until hot. Fry the cakes for 1-2 minutes on each side or until golden. Drain on paper towel.
Serve with a nice chutney.
Notes
******You can make ahead of time and place on baking sheet lined with wax paper and refrigerate until ready to fry. Let sit at room temperature about 10 minutes.
