Zippy Roasted Green Beans

Ingredients
  • 1 lb. haricots verts (tiny green beans), trimmed
  • 2 T. extra virgin olive oil
  • Kosher salt, black pepper, garlic powder to taste
  • 4 t. Dijon mustard
  • 2 T. Apple Cider vinegar
  • Juice of 1 fresh lemon
Instructions
  1. Preheat oven to 400.
  2. Mix the olive oil, mustard, vinegar and lemon juice.
  3. Pour over the trimmed green beans. Toss well.
  4. Add seasoning and mix again.
  5. Spread in a single layer on a 15x11” baking sheet sprayed with PAM.
  6. Bake 15-18 minutes or until desired degree of doneness. Stirring once or twice during cooking process.
Notes
*****You can pour the marinade over the beans and refrigerate for 24 hours before cooking.
