In a bowl, beat eggs and whisk in water. Set aside.
In another bowl, combine the bread crumbs, parsley, garlic, cheese, oregano, basil and season to taste with salt, red/black pepper and garlic powder.
Season the pork chops.
Dip the chops into the egg wash, then dredge in the bread crumb mixture.
Place chops on a wire rack placed on a baking sheet. You can spray the rack with PAM.
Drizzle with olive oil over the chops. Flip them and drizzle more olive oil.
Place in oven and bake. Turn once when the first side begins to brown.
I like to cook my chops to a light pink in the center. This cooking process is usually about 12-15 minutes per side, depending on thickness of chops. Typically, internal temperature is 145 for pork. I usually cook to 140 and let rest for 5 minutes once out of the oven.
