Nicole's All-in-One New Year's Casserole
- 1 (16-oz.) container of chopped onion mix
- 2 lbs. lean ground meat
- 1 head of cabbage, chopped up
- 1 can of cream of mushroom soup
- 1 can of cream of celery soup
- 2 c. of cooked black-eyed peas (can be canned, frozen or cooked dried peas)
- 4-6 c. cooked rice
- 1 c. grated parmesan cheese
- 2 c. shredded sharp cheddar cheese or your favorite cheese
- Salt, red/black pepper, garlic powder
- PAM
- Heat a large pot, and add meat and break up into crumble form and add onion mixture. Cook until meat is done. Drain off any excess oil.
- Add the soups and peas. Mix well. Season to taste.
- Stir in cabbage. Mix well.
- Stir in parmesan cheese. Mix well.
- Add cooked rice and mix well. Simmer over low heat. Stir occasionally and taste for seasoning, until well blended.
- Place in baking dish sprayed with PAM. Top with the shredded cheese.
- Bake at 350 until hot and bubbly.
