Sweet Butter Pecan Roasted Yams

Ingredients
  • 6-8 c. peeled and cubed Louisiana yams
  • 3 T. butter, cut into small pieces
  • 3 T. light brown sugar
  • ½ c. chopped roasted pecans
  • ¼ t. cayenne or black pepper
  • 1 t. ground cumin
Instructions
  1. Preheat oven to 400. Line a rimmed baking sheet with foil and spray with PAM.
  2. In large bowl, mix all the ingredients.
  3. Spread onto baking sheet.
  4. Bake 20 minutes or until yams are tender and sugar is caramelized.
