Sweet Butter Pecan Roasted Yams
- 6-8 c. peeled and cubed Louisiana yams
- 3 T. butter, cut into small pieces
- 3 T. light brown sugar
- ½ c. chopped roasted pecans
- ¼ t. cayenne or black pepper
- 1 t. ground cumin
- Preheat oven to 400. Line a rimmed baking sheet with foil and spray with PAM.
- In large bowl, mix all the ingredients.
- Spread onto baking sheet.
- Bake 20 minutes or until yams are tender and sugar is caramelized.
