1 (16-oz.) pkg. fresh or frozen baby lima beans, thawed
1 c. diced tomato
1 c. hot spicy hot vegetable juice cocktail or bloody mary mix
1 t. crushed red pepper
Salt and black pepper to taste
Instructions
Coat large skillet with PAM and then drizzle bottom with olive oil.
Over medium-high heat, add celery, onion and pepper and sauté until tender.
Add beans and remaining ingredients. Bring to a boil and cover and reduce heat and simmer for 12-15 minutes or until beans are tender. Taste for seasoning.
