Homegrown Creole Tomatoes and Cucumber Salad with Dressing

Ingredients
  • 1 T. red wine vinegar
  • 1 t. salt
  • 1-2 t. black pepper
  • 4 T. extra virgin olive oil
  • 1-2 t. dijon mustard
Instructions
  1. In small bowl combine vinegar, salt and pepper. Stir until salt dissolves.
  2. Add oil and mustard and whisk until ingredients are emulsified.
  3. Refrigerate and chill.
