Alice's Italian Caponata

- 12-16 oz. favorite whole wheat pasta
- Olive oil
- Kosher salt
- Fresh black pepper
- Fresh grated parmesan cheese
- Prepare Alice’s Italian Caponata Recipe or buy a good quality store bought Caponata.
- Boil pasta in salted water that has about 2 T. olive oil added.
- Drain pasta when done.
- In a pot, heat the caponata and add the hot pasta.
- Season with salt and pepper and additional olive oil if desired.
- When serving, top with freshly grated parmesan cheese.
