Mardi Gras Salad
- 4 stalks celery, chopped
- 1 (16-oz.) can French-style green beans, drained
- 1 (17-oz.) can Early peas, drained
- 1 (14-oz.) can artichoke hearts, drained and chopped
- 1 (4-oz.) jar pimentos, drained and chopped
- ½ large green bell pepper, chopped
- ½ large red bell pepper, chopped
- ½ large yellow bell pepper, chopped
- ½ large red onion, chopped
- 1 (8-oz.) can water chestnuts, drained and chopped
- Combine all the ingredients and pour marinade over it. Blend well.
- Marinade overnite. Can be prepared several days ahead.
