In large pitches, muddle mint springs with sugar and lemon/lime juices until well combined.
Add ice, rum and club soda and stir together.
Pour into glasses, straining out mint.
Use mint fresh mint leaves to garnish.
Notes
*****Muddle means to use a wooden spoon and gently mash the mint leaves. You don’t want to break it up too fine but want to release the oils from the mint leaves.
