Tasty Zucchini Zoodles, Green Peas and Tortellini Salad
- 1 (9-oz.) pkg. refrigerated whole-wheat 3 cheese tortellini
- ½ c. frozen peas
- 2 fresh zucchinis cut into ribbons or zoodles
- Olive oil
- 2 T. minced garlic
- Zest and juice of 1 fresh lemon
- Salt, black pepper
- Fresh basil leaves
- Cook pasta according to package directions, omitting salt and oil.
- Add peas to last 5 minutes of pasta cooking.
- Drain and cool 10 minutes.
- Place in a medium bowl.
- Heat medium skillet over medium eat and drizzle with olive oil to coat bottom.
- Add garlic, stir constantly. Remove from skillet.
- In skillet, drizzle a little more olive oil as needed. Add zoodles and cook until slightly softened, 1-2 minutes.
- Add zoodles and garlic to tortellini mixture in bowl.
- Combine zest, lemon juice, salt and pepper. Mix into tortellini mixture.
- Drizzle with olive oil. Gently toss to coat and mix.
- Taste for any additional seasoning if needed.
- Garnish with chopped fresh basil, if desired.
