Grouper with Cherry Tomatoes and Black Olives

Ingredients
  • 2 lbs. fresh grouper fillets
  • ½ lb. cherry tomatoes, cut in half
  • 4 oz. black olives, pitted, cut in half
  • 2 green onions, chopped
  • 6 T. extra virgin olive oil
  • ¼-1/2 c. dark lager beer
  • 3-4 basil leaves
  • 6 T. fish or vegetable stock
  • Salt and black pepper
  • Lemon slices
Instructions
  1. Heat olive oil in large skillet, saute the green onions.
  2. Add the seasoned fillets and cook 3-4 minutes. Turning carefully halfway through the cooking time.
  3. Add the tomatoes and olives and cook another 2-3 minutes.
  4. Add the beer and allow to evaporate over a higher heat.
  5. Add hot stock, season and cook another 2 minutes.
  6. Add chopped basil and serve with fresh lemon slices.
