Luck of the Irish Cream Chocolate Cheesecake

Ingredients
  • 1 ½ c. graham cracker crumbs
  • ½ c. sugar
  • ½ c. unsweetened cocoa powder
  • ¼ c. butter, melted
  • 3 (8-oz.) packages cream cheese, softened
  • 1 (14-oz.) can sweetened condensed milk
  • ½ c. Bailey’s Irish Cream Liqueur
  • ½ c. miniature semisweet chocolate morsels
  • 3 large eggs
  • 1 T. vanilla extract
  • Ice water
Instructions
  1. Preheat oven 275.
  2. Spray 9” springform pan with baking spray with flour.
  3. Wrap bottom of pan with 3 layers of foil.
  4. In bowl, stir together crumbs, sugar and cocoa.
  5. Stir in melted butter.
  6. Press mixture into bottom and ½” up sides of the pan.
  7. In bowl of a stand mixer, beat cream cheese until smooth.
  8. Add condensed milk, Bailey’s and chocolate morsels. Beating until combined.
  9. Reduce speed to low and add eggs, one at a time, beating just until combined after each addition.
  10. Beat in vanilla.
  11. Pour into prepared crust.
  12. Place springform pan in large roasting pan.
  13. Slowly pour ice water into roasting pan until it reaches ½” up side of springform pan (do not fill above foil.)
  14. Bake 1 hour.
  15. Turn off oven and leave cheesecake in oven with door closed for 1 hour.
  16. Remove from oven, gently run knife around edges to release sides. Let cool completely.
  17. Cover and refrigerate for at least 8 hours before serving.
