Easy Cheeseburger Shepherd’s Pie

Ingredients
  • 1 ½ lbs. russet potatoes, peeled and cut up
  • ½ c. sour cream
  • ¼ c. milk
  • ½ t. salt
  • 1 c. shredded cheddar cheese
  • 1 ½ lb. ground beef
  • 1 c. chopped red/green bell peppers
  • ½ c. chopped onion
  • 2 T. minced garlic
  • 1 ½ c. frozen whole kernel corn
  • 1 c. water
  • 1 (6-oz.) can tomato paste
  • ½ c. rough chopped dill pickles
  • ¼ c. yellow mustard
  • 1 t. crushed dried oregano
  • Extra cheese to sprinkle on top
  • Sliced green onions, garnish
  • Crispy cooked bacon, crumbled, garnish
Instructions
  1. Preheat oven 350.
  2. In large saucepan, add potatoes to enough salted water to cover them, boil until tender. Drain.
  3. Mash potatoes and gradually beat in sour cream, milk and salt.
  4. Stir in ½ c. of cheese.
  5. In a large skillet cook beef, bell peppers, onion and garlic, until meat is browned. Drain any fat.
  6. Stir in the corn, water, paste, pickles, mustard and oregano. Bring to boil, reduce heat and simmer uncovered, 5 minutes.
  7. Stir in remaining cheese.
  8. Transfer meat mixture to 2 ½ qt. shallow baking dish.
  9. Spoon mashed potatoes in mounds on top of meat mixture.
  10. Sprinkle with additional cheese.
  11. Bake 20 minutes or until heated through and cheese is melted.
  12. Top with green onions and bacon, if desired.
