Easy Cheeseburger Shepherd’s Pie
- 1 ½ lbs. russet potatoes, peeled and cut up
- ½ c. sour cream
- ¼ c. milk
- ½ t. salt
- 1 c. shredded cheddar cheese
- 1 ½ lb. ground beef
- 1 c. chopped red/green bell peppers
- ½ c. chopped onion
- 2 T. minced garlic
- 1 ½ c. frozen whole kernel corn
- 1 c. water
- 1 (6-oz.) can tomato paste
- ½ c. rough chopped dill pickles
- ¼ c. yellow mustard
- 1 t. crushed dried oregano
- Extra cheese to sprinkle on top
- Sliced green onions, garnish
- Crispy cooked bacon, crumbled, garnish
- Preheat oven 350.
- In large saucepan, add potatoes to enough salted water to cover them, boil until tender. Drain.
- Mash potatoes and gradually beat in sour cream, milk and salt.
- Stir in ½ c. of cheese.
- In a large skillet cook beef, bell peppers, onion and garlic, until meat is browned. Drain any fat.
- Stir in the corn, water, paste, pickles, mustard and oregano. Bring to boil, reduce heat and simmer uncovered, 5 minutes.
- Stir in remaining cheese.
- Transfer meat mixture to 2 ½ qt. shallow baking dish.
- Spoon mashed potatoes in mounds on top of meat mixture.
- Sprinkle with additional cheese.
- Bake 20 minutes or until heated through and cheese is melted.
- Top with green onions and bacon, if desired.
