Stepped-Up Shredded Chicken and Avocado Nacho Salad

Ingredients
  • 1 c. fresh pico de gallo, divided
  • 1 T. good quality olive oil
  • 6 c. rough chopped iceberg lettuce or your favorite
  • 2 c. shredded skinless, boneless rotisserie chicken breasts
  • 2 ripe peeled avocados, sliced
  • 20-30 multigrain tortilla chips
  • Fresh crack black pepper
  • Sliced fresh jalapenos, garnish
Instructions
  1. Combine ½ c. pico and olive oil in food processor and process until smooth. Set aside.
  2. Spread lettuce over large platter.
  3. Top with chicken and avocado.
  4. Drizzle evenly with blended pico and then the remaining ½ c. pico.
  5. Sprinkle with chips and pepper.
  6. Garnish with jalapenos if desired.
