Creamy Goat Cheese and Fig Bruschetta

Ingredients
  • 1 ¼ c. chopped dried Mission figs
  • ⅓ c. sugar
  • ⅓ c. coarsely chopped orange sections
  • 1 T. orange zest
  • ⅓ c. fresh orange juice
  • 1 t. chopped fresh rosemary
  • ¼ t. freshly ground black pepper
  • 40 (1/2” thick) slices French bread baguette, toasted
  • 1 ¼ c. crumbled goat cheese
  • 2 T. finely chopped walnuts
Instructions
  1. Combine first 7 ingredients in a small saucepan.
  2. Bring to boil.
  3. Cover, reduce heat and simmer 10 minutes or until figs are tender.
  4. Uncover and cook 5 minutes or until mixture thickens.
  5. Remove from heat.
  6. Cool to room temperature.
  7. Preheat broiler.
  8. Top each bread slice with 1 ½ t. fig mixture and 1 ½ t. goat cheese.
  9. Arrange bruschetta on a baking sheet.
  10. Sprinkle with walnuts.
  11. Broil 2 minutes or until nuts begin to brown.
  12. Serve warm.
