Savory Yam Bisque with Minted Chili Oil

Ingredients
  • 18-20 mint sprigs, chopped
  • 3 T. good quality olive oil
  • ½ t. sugar
  • 1 t. salt
  • 1 t. black pepper
  • ½ t. crushed red pepper flakes
Instructions
  1. In small bowl, combine all the ingredients and let set for 10-12 minutes.
  2. Process in blender or food processor until smooth.
  3. Place in a small saucepan and heat through. DO NOT BOIL!
  4. Drizzle on top of bisque after served in individual bowls.
