Creamy Layered Pumpkin Mousse
- 1 (8-oz.) package cream cheese, softened
- ¼ c. sugar
- 1 (15-oz.) can solid-pack pumpkin
- 1 (3.4-oz.) package instant vanilla pudding mix
- 1 T. pumpkin pie spice
- 1 c. cold milk
- 2 c. Cool Whip topping, plus extra for layering
- Crushed chocolate graham crackers or ginger snaps
- In bowl, beat cream cheese and sugar until smooth.
- Add pumpkin, pudding mix and pie spice.
- Gradually beat in milk.
- Fold in whipped topping.
- In parfait glass (about 8 glasses), spoon about ¼ c. of the pumpkin mousse into each dish.
- Put a layer of Cool Whip (about ¼ c. also).
- Sprinkle a layer of the crumbled graham crackers.
- Repeat layers until top of dish is full.
- Refrigerate until ready to serve.
