Refreshing Watermelon Bellinis
- 3 c. cubed, seeded watermelon, frozen
- 2-3 T. sugar (depending on sweetness of melon)
- 3 T. fresh lemon juice
- 3 c. chilled prosecco, sparkling wine or champagne, divided
- Julienne-cut lemon rind
- Place melon, sugar, juice and 1 c. of prosecco in blender.
- Process until smooth.
- Pour about ⅓ c. of mixture into each of 8 stemmed glasses.
- Pour ΒΌ c. of remaining prosecco into each glass.
- Garnish with lemon rind.
- Serve immediately.
