Zesty Shredded Brussels Sprout and Bacon Salad

Ingredients
  • 8 slices thick-cut good quality bacon, cut into 1” pieces
  • ½ medium red onion, thinly sliced
  • 2 lbs. shredded Brussels sprouts
  • ½ c. toasted pecans
  • ⅓ c. balsamic vinegar
  • 1 T. firmly packed dark brown sugar
  • 2 t. kosher salt
  • 1 t. Dijon mustard
  • Zest of 1 lemon
  • 1 t. red pepper
  • 3 T. olive oil
Instructions
  1. In large skillet, cook bacon until crispy.
  2. Remove bacon with slotted spoon and drain on paper towels.
  3. In reserved drippings in skillet, add onion and cook until starts to brown.
  4. Remove onion from pan and drain, also.
  5. In large bowl, combine sprouts, bacon, onion and pecans.
  6. In medium bowl, whisk together vinegar, brown sugar, salt, mustard, zest and red pepper.
  7. Whisking constantly, slowly add oil.
  8. Add dressing to Brussels sprouts mixture. Toss and taste for seasoning.
