Sweet and Tangy Prosciutto Wrapped Grilled Okra

Ingredients
  • ¼ c. olive oil, divided
  • 2 T. balsamic vinegar
  • 1 T. honey
  • 1 t. lemon zest
  • Black pepper, kosher salt
  • ½ lb. okra pods, cut in half lengthwise
  • 4 (1/2-oz.) slices prosciutto, cut lengthwise into ½” wide strips
  • PAM
Instructions
  1. Preheat grill to medium-high.
  2. Combine 3 T. olive oil, vinegar, honey, zest, pepper and salt. Whisk to mix.
  3. Wrap okra halves with prosciutto strips.
  4. Thread wrapped okra onto 8 (12”) skewers.
  5. Brush wrapped okra with remaining olive oil.
  6. Place okra on grill rack coated with PAM.
  7. Grill 8 minutes or until prosciutto is crisp and okra is tender, turning once after 4 minutes.
  8. Brush the okra with half of balsamic mixture. Grill 1 minute more.
  9. Remove from grill.
  10. Drizzle with remaining vinegar mixture.
