Sweet and Tangy Prosciutto Wrapped Grilled Okra
- ¼ c. olive oil, divided
- 2 T. balsamic vinegar
- 1 T. honey
- 1 t. lemon zest
- Black pepper, kosher salt
- ½ lb. okra pods, cut in half lengthwise
- 4 (1/2-oz.) slices prosciutto, cut lengthwise into ½” wide strips
- PAM
- Preheat grill to medium-high.
- Combine 3 T. olive oil, vinegar, honey, zest, pepper and salt. Whisk to mix.
- Wrap okra halves with prosciutto strips.
- Thread wrapped okra onto 8 (12”) skewers.
- Brush wrapped okra with remaining olive oil.
- Place okra on grill rack coated with PAM.
- Grill 8 minutes or until prosciutto is crisp and okra is tender, turning once after 4 minutes.
- Brush the okra with half of balsamic mixture. Grill 1 minute more.
- Remove from grill.
- Drizzle with remaining vinegar mixture.
